Kobe Beef NYC | Steak Cubes-Premium Loin (2 pkgs)

Kobe beef NYC is one of the most tightly regulated beef products in the world. It comes exclusively from Tajima-gyu cattle, a pure strain of Japanese Black raised in Hyogo Prefecture. The cattle must be born, raised, and processed in Hyogo to even qualify for consideration.

To carry the official chrysanthemum seal, the beef has to meet strict grading standards set by the Kobe Beef Marketing & Distribution Promotion Association. Only carcasses graded A4 or A5, with high marbling scores and precise weight requirements, are eligible. Anything below that standard cannot be labeled as Kobe Beef.

Traceability is just as strict. Every breeding and feeding farm is registered, and distribution is tightly controlled. Wholesalers, retailers, and restaurants must all be officially designated and certified before they are allowed to sell Kobe Beef.
