Kobe beef steak is one of the most strictly regulated beef products in the world. To be recognized as authentic, the cattle must come from the Tajima strain of Japanese Black cattle and be born, raised, and processed in Hyogo Prefecture, Japan. There’s no flexibility on location or lineage. If it doesn’t meet both, it’s not Kobe.
Carcasses are evaluated by the Kobe Beef Association and must achieve a minimum grade of A4 or A5 under Japan’s official grading system. Only then can the beef carry the chrysanthemum seal, which serves as proof of authenticity and quality.
The controls go beyond grading. Every breeding and feeding farm involved is officially registered. On the sales side, only certified members of the Kobe Beef Association are allowed to distribute it. That includes wholesalers, retailers, and restaurants, all of whom must be approved and listed as designated stores.
It’s a closed system by design. The result is tight traceability, consistent standards, and a level of exclusivity that few other beef programs can match.
